Bio

Chef Siddiq has 40 years of experience in the hospitality industry and this is evident in the wealth of knowledge he brings to the table, For someone who showed a keen interest in following a medical profession, his career journey has been more than fascinating! His entry into this profession was accidental, he says, but 38 years later, his passion for fine food and the heat of the kitchen drives him.

 

His second year at college triggered his culinary instincts and he was all set to embrace the challenging and exciting love for the kitchen!  And since then, there’s been no looking back. Chef Siddiq’s rich experience in managing exacting kitchens has helped him enhance and hone his culinary skills. Chef Siddiq has worked at the flagship Taj property in Mumbai, Vivanta by Taj-Malabar, and Vivanta by Taj-Fisherman’s Cove, Taj Calicut and Taj Club House among others of which 22 years he has worked as an Executive Chef. He has also worked in the Kitchens at the south of France, Singapore and Cape Town and UAE

 

While Modern Global cuisine is his favourite, he loves to experiment with Mediterranean flavours, and enjoys cooking seafood. His signature cooking style is Grilling and Braising, and he likes to stay simple and elegant on plating. Chef Siddiq has also been in-charge of many celebrity caterings including Prime Ministers, Presidents, musicians, artists and the latest being the grand Ambani’s wedding at Mumbai. He is also specialized in plated sit down dining for large numbers.

 

Having graduated from the Institute of Hotel Management, Mumbai, he has also taught for four years at the Institute of Hotel Management, Kerala. He believes that one should experiment with food as cooking is like  painting, where one can learn by trying various combinations and cooking methods as there are unlimited variety of ingredients to play with.

 

Since 2017 he runs a Restaurant and Hotel Consultancy outfit Called Kitchen Affairs dealing with entire back of the house planning, Designing, Curation of Menus, trials and training, Sourcing of CCG, Food Photography, Coordination with Branding and Marketing Agencies and Turn key operations.

Also does audits, corrections, Training etc on a retainership basis for existing F & B outlets and hotels. He has completed 27 projects ranging from 5star hotels, large restaurants, Specialty diners, Resto bars, Pubs, cafes, and coffee shops and Delis in India and abroad
