The blistering summer heat in May can be relentless. A cool refreshing drink in the afternoon when the heat is at its fiercest can do wonders.
Gauri Patil, Assistant Professor at V. M. Salgaocar Institute of International Hospitality Education (VMSIIHE) shares two of her favourite summer cooler concoctions created from locally grown summer fruits that are bound to remind us of our childhood days.
Raw mango and the locally sourced starfruit feature prominently in the summer drink. Raw mangoes are rich in vitamin C, vitamin A, vitamin B6, and vitamin K. It is also a vital source of magnesium, calcium, iron, and dietary fibers that detoxify the liver. This easy-to-make drink is great for children looking for a refreshing drink after sweating it out at play or makes for a wonderful afternoon quencher for the weekend.
Star fruit or carambola or kormolla in the local language — is a sweet and sour fruit that has the shape of a five-point star. The skin is edible and the flesh has a mild, sour flavor that makes it popular in a number of dishes. The seasonal fruit is often spotted at local markets. The fruit is typically used to prepare pickles and to be added to local curries.
Recipe 01 – Raw Mango Panhe (6/7pax)
Ingredients Qty
Raw mangoes 3
Sugar 200 gms
Cardamom powder 1 teaspoon
Salt As per taste
Water 500 ml
Method
● Peel raw mangoes and boil them in a pressure cooker. Once it is boiled let it cool down. Discard the
seed.
● Using the strainer, strain the mango pulp.
● Add sugar to the pulp. Mix it well
● Add the cardamom powder and salt as per requirement.
● Finally, top it up with water.
● Your drink is ready to enjoy.
● You can keep this mix in the refrigerator for up to a week.
Recipe 02 – Starfruit Cooler
Ingredients Qty
Star fruit(kormola) ripe & raw 4
Sugar/jaggery 200 gms
Salt As per taste
Cinnamon powder A pinch
Water 500 ml
Method
● Take 2 raw and 2 ripe star-fruits to adjust the sweet and sour flavor.
● Wash them and boil them in a pressure cooker or in a normal thick bottom pan.
● Once cooked (15 min) remove them off the flame. Let it cool down.
● Deseed them and extract only the pulp.
● Using a strainer, strain the pulp. Add sugar or jaggery. Jaggery basically gives a dark color to
the drink compared to sugar. It is also good for health.
● Add salt and cinnamon powder as per your preference.
● Finally, add water.
● This drink tastes best when served chilled. To serve, pour over crushed ice.
