Asst. Prof – Food Production

Chef Sandip Madkaikar is from Goa. He has graduated from the Institute of Hotel Management, Kovalam, with Culinary Arts as his specialization. He has also completed his Masters in Travel and Tourism Management and is a Certified Learning Facilitator.

He began his career at the prestigious five-star Taj Palace, New Delhi. Sandip worked across all sections and kitchens at the Taj, learning a broad spectrum of food styles. He worked in Luxury properties of the Taj like the Taj Mahal Mumbai, Rambagh Palace Jaipur, Taj Mahal Delhi, Taj Exotica Goa, etc honing his interests and skills in fine dining restaurants.

Chef Sandip’s interest in recipe development and modern cuisine continued as he jointly with his colleagues started a multicuisine standalone restaurant –Mezze, in Goa, in which he explored his entrepreneurial skills. In 2013, Sandip moved to educational institutes as a culinary educator. He has worked in reputed hospitality institutes in India and Nepal. Cooking has always been his passion and priority in life. With hands-on experience in the industry and education system, he motivates and inspires young minds to pursue academic and personal excellence.

He has a modernist approach towards cooking and teaches food as a science. He encourages students’ ideas and participation in various theme dinners, workshops, food festivals and competitions where there is the freedom to explore one’s potential, and constantly pushes for improvement.

Conferences and workshops attended-

International Symposium on “Food Safety, Quality Assurance and Global trade-Concerns and Strategies”- VII annual conference of Indian Association of Veterinary Public Health specialists conducted by G.B Pant University of agriculture and technology, Pantnagar in collaboration with Michigan State University.

Library Science Research: ‘Techniques, methods and trends’ A one day national level librarian development programme conducted by MES’s Institute of Management and Career Courses (IMCC)

“Library services in the virtual world: Quality & Effective Information Delivery”- A virtual International Development of program for LIS professionals conducted by MES’s Institute of Management and career courses (IMCC)

One day National conference on the theme- Modern Libraries: Recent trends, Challenges, and Opportunities conducted by Goa University Library and Goa College Librarians’ Association.

One day workshop on Manuscript writing and publishing in quality research journals conducted by Directorate of Internal Quality Assurance, Goa University.
