The summer season is undoubtedly here and it’s that time of the year when we crave ice creams, chilled drinks and cooling fruits. When we think of summer, one particular fruit particularly never fails to cross our minds and that’s the much-loved mango! 

Gauri Patil and Cleona Pereira, Faculty Chefs at V. M. Salgaocar Institute of International Hospitality Education (VMSIIHE) take us through the recipes to make two traditional local delicacies made using mangoes  –  ‘Mango Sath’ and ‘Mangaad’.

“Just like many other fruits or vegetables, mango too have various  variations, Mankurad being the most widely appreciated. Mangesh, Culas, Afonso,  Hilario  and Mussarate are all used for different recipes too”,  explained Chef Gauri Patil. Mangoes are known for being versatile fruits. Dairy products like fresh cream, milk and yoghurt go wonderfully with the unique flavour of mangoes. For a fresh twist to a meal, prawns,  chicken, and dark chocolate compliment mangoes perfectly.

‘Mango Sath’, also known as Mango leather, is an authentic delight for all mango lovers. In this delicacy, the pulp of the fruit is dried out in the sun layer by layer until you get a tangy, sour and savoury snack. It is easy to make and can last for a year and longer”,  explained Chef Cleona.

Mangaad, which is a  popular Goan Mango Jam, is  prepared in many  households in the state in the blazing months of summer.  

Recipe 01- Mango Sath 

Ingredients and Quantities

Mango pulp – 15-20 nos

Sugar- 500 gms

Black pepper powder- 25 gms

Salt- 20-30 gms

Method of Preparation 

To prepare the dish: 

1) Take any local variety of mango and extract the pulp into a bowl

2) Add sugar, pepper powder, salt to the pulp and mix it together well

3) Spread the pulp evenly onto a thali Or any aluminium plate until it is one paper thin layer 

4) Let the sun do it’s magic by placing the tray to dry out under it’s heat 

5) Once dry, you can add two more layers in a similar manner 

6) Once the tangy layers have dried well together, cut your homemade Sath into pieces and indulge in the goodness! 

Recipe 02- Mangaad Or Mango Jam

Ingredients and quantity

Ripe mangoes (preferably Mussarate) – 5 nos

Sugar – 250 gms

Lemon juice – 10 ml 

Salt- one pinch

Method of Preparation:

To prepare the dish: 

1) Wash the mangoes thoroughly and extract the pulp

2) Put the pulp in a blender and blend it till it’s a smooth paste

3) Grab a nonstick pan and pour the pulp along with the lemon juice and allow it to simmer on a low flame for 10 minutes. This allows the evaporation of the moisture from the pulp

4) Don’t stop stirring to ensure that it doesn’t stick to the pan

5) Depending on the sweetness of the mangoes and the sweetness you desire in your mango jam, add the required amount of sugar. 

5) Sprinkle a pinch of salt 

6) Once the jam begins to stick to the ladle, you’ll know that your Mangaad is ready. 

7) Let it cool down and then store it in a tightly sealed jar to relish whenever you like!
